"One year down. A lifetime to go…"

Nice, Tim.   Real nice!  Yup, yesterday was the big paper anniversary!  After a loop of the bike course and a short run, we strolled around downtown for a bit, hit up the grocery store, and grabbed salads at Subway (Eat Fresh!) for dinner, which we ate at the same place we got married last year.

Before we went for our ride, we encountered this guy in the hotel parking lot:

Tonight I opted for a “home-made” salad.  To allow for Core-Diet-friendly meals we’ve stocked our mini-fridge to full capacity, and turned half of the bathroom into a kitchen.

Blueberries, cherries, hard-boiled eggs, tomatoes, field greens, baby spinich, chicken, apples, cottage cheese, a red onion, and greek yogurt.

We were a little chilly last night eating at the picnic table by the lake because it ended up being in the shade, so tonight we sat in the sun.  On the hotel comforter…

King-sized picnic!
